Melonade

As I sit here this Sunday evening taking stock of the previous week and wondering what lies ahead in the week to come, my mind is cast to a lovely refreshing beverage I made recently. It was lovely and sunny this past Friday and I happened to have a rather large organic watermelon I had recently bought that was just calling to be eaten. Inspired by recipes for home made old fashioned pink lemonade, I decided to make some "melonade".You know that old saying when life gives you (in my case melons!) you make some all organic and natural refreshing melonade! to enjoy on a sunny summer day.

INGREDIENTS
1/2 a Watermelon (organic if possible)
1 inch of fresh stem ginger
Juice of 2 Lemons
Juice of 1 Lime
500 ml Sparkling water
2 Tbsp Coconut nectar (you can also use any low GI natural sweetener of choice)
Shredded mint leaves (optional)

METHOD
Cut the watermelon in half setting aside one half and de-seeding the other half as much as possible
Scoop out as much watermelon fruit as you can with a spoon and place into the food processor or blender.
Remove the skin from the stem ginger, chop it and add to the watermelon
Into a jug or large container place the sparkling water and add the juices of the two lemons and lime and the sweetener.
Stir to mix all the juice and add the mixture to the watermelon in the blender.
Add the shredded mint leaves if adding and blend the mixture until nice and smooth.
Strain the mixture to get rid of the pulp
You should be left with some lovely refreshing melon juice ready to enjoy as is or with some added ice and a slice of lime.
