Hot raw cacao


This past weekend, the weather here in England took a downhill turn, torrential rain, huge gusts of wind and even hail storms in certain areas. Mother nature still hasn't got that memo on summer being that it is June! Being indoors, I decided to cuddle up all snug with my little one and this called for some yummy guilt free and clean hot chocolate to soothe and keep me warm without all the unnecessary additions.



INGREDIENTS

 1 1/2 Tbsps of raw, unrefined and organic cacao powder (not cocoa!) or carob powder
1 cup of nut milk or non dairy milk (full fat coconut milk makes it creamier)
1 teaspoon of low GI sweetener such as xylitol, maple syrup or coconut nectar
1/4 tsp of cinnamon
1/4 tsp nutmeg
1 drop of vanilla extract

Makes one cup!


METHOD

Into a small saucepan put the non dairy milk followed by the spices and vanilla extract
warm the milk whilst whisking every couple of minutes.
After 3 to 5 minutes remove the saucepan from the heat 
Pour the resulting creamy hot chocolate into your favourite mug add a stick of cinnamon (optional) and enjoy with a good book or even a movie on a rainy day.
