Seasonal Chia Pudding

It's that time of year when lovely dark berries are in season. This lovely chia pudding is one of my favourite after yoga snacks or even dessert. It is packed full of nutrients and healthy fats to keep you going through the day.

INGREDIENTS

Organic chia seeds
Seasonal mixed berries (a handful)
Home made almond milk
Coconut nectar (or sweetener of choice)
Coconut oil (One tablespoon)
Fresh vanilla
Sunflower seeds
Lots of love!

METHOD

Soak chia seeds in filtered water for ten minutes to thirty minutes or overnight and leave in the fridge. This helps the seeds absorb the water and form a pudding like consistency.
In a blender or food processor add your frozen berries vanilla, coconut nectar and coconut oil. Blend together and set aside. Next remove the chia pudding from the fridge and add the desired amount of almond milk.
Spoon the blended berry mix on top of the Chia pudding and garnish with some more fresh berries and sunflower seeds. Enjoy!
