Mango Chia Pudding

It has been a little while since my last blog post, this has been due to me recovering from a nasty bug. With the spring equinox and the first official day of spring a couple of days ago, I took some inspiration and decided to have a refreshing chia pudding with some fresh mango to spring clean my body. It is so easy to make and so filling and nourishing, it definitely didn't disappoint.

Mango chia pudding





INGREDIENTS

3 Tbsp Chia seeds
1 Tbsp carob syrup
450 ml Almond milk
1 Mango
1/2 tsp of ground nutmeg
1 Tbsp  unsweetened shredded coconut



METHOD

Place the chia seeds in a clean container and add the almond milk  and carob syrup
cover the container with the chia and almond milk and place in the fridge overnight,This will allow the chia seeds time to absorb the moisture from the milk and form a gel like consistency.
The next day, take out the chia pudding from the fridge 
Slice and chop the mango into chunks and add this to the chia pudding
To finish off, sprinkle the shredded coconut on top and dust with the ground cinnamon.
Grab a spoon and dig in!
