Simple Carrot Smoothie

I had been feeling a little bit sluggish digestively as I have recently recovered after a nasty stomach flu. I was craving some fresh juice or a smoothie that would not only act as a cleanser but also have antioxidant properties. Peering into my fridge to see what produce I had, I was able to conjure up this delicious smoothie packed full of vitamins such as vitamin A and C and Beta carotene and phytonutrients all great for skin, vision and your insides too! The vibrant colour is seasonal for autumn and definitely helped perk up what had been a grey and dreary afternoon in England.



INGREDIENTS

Four Carrots 
Two Apples (preferably red variety)
One Plum
One Date to sweeten (Or sweetener of choice)
Filtered water


METHOD

Remove the carrot skin and chop or dice carrots
Cut apples into to small sections
Cut and de stone the plum
Slice the date and add to the mix
Put all the chopped fruit into the food processor or blender
Add 500ml to 1 litre of filtered water or as much as required
Blend until a smooth consistency is reached.
Pour into a glass or container of choice and enjoy!
