So with many a chilly evening and my mind turning to things that make me feel warm and cosy I decided to whip up a healthy tea time snack. It is filling, so simple to make and filled with natural goodness, gluten free, dairy free and nut free. Bon appetite!



INGREDIENTS

Two cups of organic gluten free steel cut oats
Two ripe bananas
Half a cup of unsweetened shredded coconut flakes
One cup of raisins or sultanas
Half a cup of sunflower seeds
One teaspoon of cinnamon
One and a half tablespoons of coconut nectar (or healthy sweetener of choice)
One and a half tablespoons of coconut oil
Half a teaspoon of gluten free baking powder
One tablespoon of apple sauce
Half a cup of almond milk


METHOD

First peel and chop the bananas into small rounds and add to a mixing bowl
Mash the bananas thoroughly until smooth
Add to the mixing bowl all of the dry ingredients, so oats, cinnamon etc...
Add the coconut oil the apple sauce and almond milk last.
Mix all the ingredients in the bowl until a doughy consistency is achieved.
Shape the dough into balls and place on a baking sheet or tray
Pop them in the oven at 220c for fifteen to twenty minutes
When done remove from the oven and set the clusters out on a rack or plate to cool a little.

Pour yourself some fresh almond milk grab a couple of clusters and enjoy!!
