On a slow and lazy Sunday afternoon, feeling a bit peckish I decided to whip up a fast easy, savoury and most importantly healthy snack. My snack of choice? Kale chips, I thoroughly enjoyed making and eating these with some fresh tomato salsa and a bit of lemon juice drizzled over the chips.
INGREDIENTS
Fresh kale leaves
Half a teaspoon of sea salt
One and a half tbsp coconut oil
Black pepper
Half a lemon
METHOD
Thoroughly wash and de-stalk the kale leaves and lay on some kitchen roll to soak up any excess moisture
Transfer the kale leaves into a bowl and add the sea salt
Add in the coconut oil and massage the oil into the kale leaves until they are covered evenly
Sprinkle some ground black pepper according to your taste
Spread the kale leaves evenly on some baking paper, sheet or a baking tray
Place the kale into a pre heated oven at 120c for 10 to 15 minutes or until crispy
Remove from the oven and set aside to cool a little
Fill a bowl with some kale chips and drizzle with some fresh lemon juice
Eat with some fresh tomato salsa or healthy dip of choice
